Summer Pasta Salad

8 ounces noodles (macoroni, twists or shells)
2 ounces plus 1 Tablespoon canola oil
1/2 tomato, chopped
1/4 cup olives, chopped
1/2 bell pepper, chopped
2 ounces grated Parmesan cheese
1 ounce vinegar
2 boiled eggs, 1 yolk discarded
 


Preparation:

  • Cook noodles according to directions on package. Drain, toss with 1 Tablespoon canola oil and chill. Combine remaining ingredients in a large mixing bowl.
  • Stir well with large spoon, toss in pasta and serve.
  • Serves 4-6.

 

 

Western Quiche

One 9” pie shell, uncooked
3/4 cup swiss cheese, grated
3/4 cup colby cheese, grated
1/4 cup diced green bell peppers
1/4 cup diced onions
1/4 cup diced red bell peppers
1 cup skim milk
2 teaspoons flour 3
eggs
 


  • Preparation:
  • Preheat oven to 350 degrees.
  • Sprinkle cheese, bell peppers and onions evenly in pie shell. Set aside.
  • Combine milk, flour and eggs in a small mixing bowl. Blend well with a whisk or electric mixer.
  • Pour evenly over ingredients in pie shell.
  • Bake at 350 degrees or until a knife inserted in the center comes out clean. Allow to cool at least 10 minutes before serving.

 

 

Stuffed Jalopenos

18 fresh jalopenos
1 small package of cornbread stuffing mix
5 egg whites
1/4 cup skim milk
1 small onion
1/2 cup water
2 cloves garlic
 


Preparation:

  • Cut jalopenos in half lengthwise and remove seeds. Lay out in rows on cookie sheet(s). Cook one half of egg whites in a non-stick skillet and set aside to cool.
  • Mince onion and saute in water until transparent. Set aside.
  • Prepare stuffing according to directions on package. Place in mixing bowl.
  • Add onion, remaining egg whites, milk and garlic.
  • Chop cooked eggs and add to mixture. Mix by hand until all ingredients are thoroughly combined. Spoon mixture into jalopeno halves.
  • Bake in a 375 degree oven for about 30 minutes or until stuffing tops are browned and jalopenos have become slightly tender. Cool for 10 minutes and serve.
  • Makes 3 dozen.
